Banana Chocolate Chip Cookies

BANANA CHOCOLATE CHIP COOKIES

Try these Paleo Banana Chocolate Chip Cookies. They’re fun, easy to make and healthy.  Best of all, they go from mixing bowl to tummy in 30 minutes.

INGREDIENTS

2 bananas
1/4 cup almond butter
1/4 tsp vanilla extract
1 cup almonds
1/4 cup palm sugar
1/2 tsp salt
1 tsp baking powder
1 cup chocolate chips

METHOD

Heat oven to 350 degrees (F).  Place bananas, almond butter and vanilla extract in a large mixing bowl and set aside.  Put almonds and palm sugar in food processor and buzz until finally chopped.  Add chopped almond mix to a large mixing bowl, add salt and baking powder and mix thoroughly.  Finally, add in chocolate chips and mix only as needed.  Place dollops of cookie dough on a parchment-lined baking sheet.  Bake for 17-19 mins until golden brown.  Place on wire rack and allow to cool for 10 minutes.  Makes a dozen cookies.
