High-Protein Banana Bread (Balanced, Not Chalky)
What makes it “high protein”

Dairy (Greek yogurt or cottage cheese option)

Optional protein powder (I used Greenwise Chocolate Whey Powder)
Ingredients

3 very ripe bananas

2 large eggs
-
½ cup Greek yogurt
-
¼ cup melted butter
-
⅓ cup coconut sugar
-
1½ cups oat flour
-
½ cup whey protein powder
-
1 tsp baking soda
-
½ tsp salt
-
1 tsp vanilla

1 tsp cinnamon
Instructions

Heat oven to 350°F

Mash bananas until smooth

Whisk in eggs, yogurt, butter, sugar, vanilla

Stir in dry ingredients gently

Pour into greased loaf pan

Bake 45–55 minutes, until center is just set

Cool at least 20 minutes before slicing
