No-Bake Oatmeal Chocolate Cookies are full of chocolate-y goodness with low glycemic sweetness.
Who thought you could have it all? Me! There’s no flour in these tasty cookies, they are low glycemic (see recipe) , no bake. AND they are organic and satisfying. They are that little go-to pick me up kind of snack. You’ll be hooked and make them again and again.
My snacks are full of energy and goodness without all the processed fat and chemicals. After all, your brain needs SOME sugar to work properly. Sugar comes in many forms, from fruit to table sugar. We prefer things like coconut sugar, honey, fruit or maple syrup.
INGREDIENTS for No-Bake Oatmeal Chocolate Cookies
1/2 cup milk
2 cups coconut sugar
1 tsp vanilla
6 TB unsweet cocoa powder
1/2 cup melted butter
3 cups oats
METHOD
Add ingredients except for oats in saucepan, when it starts bubbling take off heat immediately.
Stir in oats.
Scoop cookie-sized amounts onto a silpat or parchment lined pan.
Should make about 21 cookies. Refrigerated until they stay together.
Keep in fridge, because they will melt if left out.
