Best Double Chocolate Muffins!

BEST DOUBLE CHOCOLATE MUFFINS!

There’s only ONE thing better than chocolate chip muffins, it’s DOUBLE chocolate muffins and these are the BEST!  If you like chocolate, check out our list of recipes that include chocolate.

INGREDIENTS

1 1/4 cup flour
1 cup chocolate chips
3/4 cup palm sugar
2 tablespoons baking powder
1/4 cup cocoa powder
1/4 teaspoon baking soda
pinch of salt
1 egg
1/2 cup yogurt
1/2 cup coconut oil

METHOD

Preheat oven to 375 degrees (F).  Combine dry ingredients in a large bowl, whisk then stir in chocolate chips.  In another bowl, combine egg, coconut oil and yogurt and stir well.  Microwave for 10 seconds.   Mix wet ingredients into the dry ingredients and sit just enough to combine.  Don’t overmix.  Pour batter into 12 paper muffin cups.  Bake 20-25 minutes or until toothpick comes out clean.  Allow to cool on a wire rack, and stand back because there will be a stampede into the kitchen when these are done.
