THIS WEEK ON FOOD TRAVEL USA

The Remilk show examined how companies are creating dairy proteins without cows through precision fermentation. Genetically engineered microorganisms are programmed to produce proteins such as whey, which are then purified and combined with other ingredients to make dairy-style products.

The central point: this is not plant milk and not traditional milk. It may contain real dairy proteins, and therefore can still affect people with milk allergies, even though no cow produced it. The show questioned whether consumers are being given clear labeling, how thoroughly these highly processed products have been evaluated, what remains in the finished product, and whether environmental promises justify replacing farms with patented, industrial food systems.

Bottom line: innovation is not automatically bad, but fermentation-made dairy should be clearly identified so consumers understand how it was produced and can choose for themselves.

ABOUT ELIZABETH DOUGHERTY

Elizabeth Dougherty comes from four generations of chefs and gourmet grocers. Her mother, Francesca Esposito, and grandmother, Carmella, were major influences during her earliest years in the kitchen.

As a teenager, Elizabeth traveled through Europe, where she developed a passion for French and Italian cuisine. She later spent a year and a half studying under an accomplished Swiss-German chef.

Elizabeth graduated magna cum laude from the New York Institute of Technology with a bachelor’s degree in Hospitality, Business, and Labor Relations. She also earned a Nutrition Certificate from Cornell University.

Her professional background includes teaching cooking classes, working as a personal chef, consulting with restaurants, developing menus, identifying cost-saving measures, and writing hundreds of food and travel articles.

In 2010, Elizabeth created Food Travel USA, bringing together food, travel, consumer protection, privacy, health, interviews, investigations, recipes, and common sense.
