TIRAMISU FUDGE – A BITE OF HEAVEN
Tired of the same old holiday desserts? Try this! It only takes a little square to feel completely satisfied. Yes, really.
INGREDIENTS:
(adapted from a Land O’ Lakes recipe, with a few extras added)
1 stick of butter
6 oz of evaporated milk
1 tsp instant espresso
1 1/2 cups sugar
1 tsp vanilla
12 oz white chocolate chips
2 cups mini marshmallows
1 cup chocolate chips
METHOD:
Grease an 8×8 pan. Melt butter, espresso and milk in 3 quart saucepan. Add sugar and use a candy thermometer, stirring until it reaches 228 degrees F. Continue cooking and stirring for 3 minutes. Take off the heat, add vanilla, white chips and marshmallows. Stir until smooth. Stir in chocolate chips for a marbled effect. Pour into pan and chill for 2 hours. Cut into squares and serve.

About Elizabeth Dougherty

Elizabeth Dougherty has been cooking and writing about food intensively for more than ten years. She is the fourth generation of chefs and gourmet grocers in her family with her mother, Francesca Esposito and grandmother, Carmella being major influences in her early cooking years. As a teenager, her family sent her to Europe where she became focused on French and Italian cuisine. She survived a year and half of culinary tutelage under a maniacal Swiss-German chef and is a graduate of NYIT, Magna Cum Laude with a Bachelor’s degree in Hospitality, Business and Labor Relations.
