Cherry Clafoutis – Funny Name Fantastic Dessert

What IS a clafoutis anyway? It’s a traditional French dessert. I could go into a complicated explanation, but just think of it like a giant, wildly rich-tasting pancake. With cherries showing up in the grocery store, you’ve got to make this easy recipe. It’s perfect for during the week when time is running short and appetites are running long.

So, if you want that little indulgence without too much fat, check this dessert out. Cherries in-season (or frozen) are one of my favorite things and combined with a little semisweet chocolate, it’s “over the top” good!

Ingredients – Cherry Clafoutis – Funny Name Fantastic Dessert
2 1/2 cups pitted, ripe cherries
3/4 cup whole milk
1 egg
1 tsp vanilla
4 oz semisweet chocolate
1/2 cup flour
1 tsp baking powder
pinch of sea salt
Method
Preheat oven to 350 degrees F. Spray a pie dish with cooking spray and add cherries. Set aside. In a medium bowl add milk, egg and vanilla. Whisk to combine. Melt chocolate over a double-boiler. Allow to cool slightly. In another medium bowl, combine flour, baking powder and salt. Add chocolate to liquid mixture, whisking to combine. Add dry mixture to liquid mixture, whisking until just combined. Pour over cherries in pie dish. Bake for 25 minutes, or until a toothpick comes out nearly clean. Serve warm. A scoop of ice cream with it is even better!
