Lick Your Plate Cornish Hens

I made these for a dinner party once and literally, one of the guests licked her plate. I’m not saying there wasn’t any wine involved in her penchant for plate licking, but it was still flattering. These are some really succulent Lick Your Plate Cornish Hens. Try them for your next gathering.

INGREDIENTS – Lick Your Plate Cornish Hens

(For two, but you could double and do four etc.)

2 rock cornish game hens, whole, giblets removed

1/2 stick butter, softened

3 lemons (one is for 1 TB zest)

1 TB tarragon

1/2 tsp salt

1/4 tsp white pepper

1 1/2 to 2 cups chicken broth

One large or two medium sliced onions

METHOD

Preheat oven to 450F

Put hens, breast sides up in a roasting or other pan about 3 inches deep.

In a bowl, mix together butter, tarragon, half the salt and pepper and zest of one lemon.

Loosen skin and gently rub the meat with half of the butter mixture under the skin

Sprinkle with remaining salt/pepper and rub remaining mixture over the outside of the birds

In the roasting pan, pour the broth and lay the onions around.

Put the birds on the top

Roast 25 to 40 minutes, until juices in the cavity run clear

Reduce the liquid with a sprinkle of flour or non gmo cornstarch whisked in.
