Savory Rich Mushroom Risotto

You can make your family happy in 18 minutes. That is how long it will take you to make risotto. This dish is so inexpensive, but is fine dining quality and they will love this dinner. Try and Make Savory Rich Mushroom Risotto tonight!

INGREDIENTS

1 TB olive oil

2 pats butter

1 chopped medium onion

1 pint sliced shitake mushrooms

1 cup arborio rice

1 cup Frey organic white table wine

5-6 cups mushroom, vegetable or chicken stock

3/4 cup Parmigiano Reggiano

METHOD

In a 2 quart pan or deep saute pan, add 1 pat butter and oil

Saute onion and mushrooms until onion is translucent over medium high heat

Add rice and coat for 2 minutes

Turn heat up a little

Add wine and allow to absorb

Add stock a little at a tine until absorbed

When rice is al dente, remove from heat

Stir in butter and then stir in cheese, test seasoning
