When you want a quick and easy dish for people who are gluten sensitive or on a low carb diet, this tasty dish will be perfect. Shake Then Bake Gluten Free Popcorn Chicken!   Homemade Popcorn chicken, coated in a crispy layer of grated parmesan cheese, offers a flavorful, low-carb alternative to traditional breaded versions. The parmesan forms a golden crust that locks in moisture, creating tender and juicy bites with a flavorful punch. Perfect for a quick snack or a protein-packed meal, this dish satisfies cravings without the extra carbs.

SHAKE THEN BAKE GLUTEN FREE POPCORN CHICKEN

INGREDIENTS 
2 lb chicken breast, cut into 2″ pieces
1/2 lb grated parmesan cheese
pinch salt
pinch white pepper
1 tsp each oregano, paprika, thyme, garlic powder
cooking spray

METHOD
Heat oven to 350F
Place the cheese and all the spices in a gallon size plastic zip bag
Add chicken to bag and seal
Shake it to coat
Put chicken on a sprayed baking pan or one covered in silpat
Don’t overcrowd the chicken, they need the extra space as they bake
Bake for 20 minutes, serve with a little honey and mustard on the side or just my ketchup

Elizabeth Dougherty has been cooking and writing about food intensively for more than ten years. She is the fourth generation of chefs and gourmet grocers in her family with her mother, Francesca Esposito and grandmother, Carmella being major influences in her early cooking years. As a teenager, her family sent her to Europe where she became focused on French and Italian cuisine. She survived a year and half of culinary tutelage under a maniacal Swiss-German chef and is a graduate of NYIT, Magna Cum Laude with a Bachelor’s degree in Hospitality, Business and Labor Relations.
