Heavenly Banana Spice Cake with Cream Cheese Frosting – Here are the three steps to yummy goodness. Make sure you keep this cake in the fridge. It is so moist the cake won’t go stale and you don’t want to leave cream cheese out for days at a time. (Not that this cake will last that long!)
INGREDIENTS – Heavenly Banana Spice Cake with Cream Cheese Frosting
8 oz cocoa butter
1 1/2 cups coconut sugar
2 eggs
1 1/2 tsp vanilla
1/2 cup milk
6 overripe bananas, mashed
3 cups flour
3 tsp baking powder
1 tsp baking soda
1/2 tsp pink salt
2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
cooking spray (I use coconut spray)

METHOD
Preheat oven to 350F
Spray a 9 x 13 baking dish
In a mixer on medium low, combine cocoa butter and coconut sugar
Beat for a couple of minutes
Add eggs, vanilla, milk and mix for a couple more minutes
Add mashed bananas, mix until combined
Turn mixer to low
In another bowl, combine dry ingredients and slowly whisk to aerate and get rid of lumps
Slowly add dry mixture to mixing bowl
When just combined, add to baking dish
Bake 30 – 35 minutes until toothpick comes out clean
Cool, until ready to frost.
Enjoy with a cup of coffee or tea any time of day. Store in refrigerator.
