Late Night Chicken Fried Rice

Late Night Chicken Fried Rice – Have some leftover rice in the fridge? Leftover veggies or frozen mixed veg in the freezer? Here’s a quick cooking class on making your own fried rice. Use any kind of leftover meat, or  eggs only, or full-on vegetarian.

By the way, Michael refused to add eggs, but normally I start off with a little grapeseed oil and two whipped eggs, which I saute on high until just cooked (no color). Then, I remove them and add back in with the other protein. It hits the spot! (And yes, it’s Korean sauce, but it’s so spicy and good with the rice.) You can leave out the sauce and stick with organic soy sauce if you prefer.

Elizabeth Dougherty has been cooking and writing about food intensively for more than ten years. She is the fourth generation of chefs and gourmet grocers in her family with her mother, Francesca Esposito and grandmother, Carmella being major influences in her early cooking years. As a teenager, her family sent her to Europe where she became focused on French and Italian cuisine.
