METHOD VIDEO Serio Cooks Creamy Spinach Ricotta Pasta
While cooking pasta, saute onions and garlic over medium heat in deep pan with olive oil for five minutes. Reduce heat slightly and add both spinach and ricotta and cook until spinach reduces in size. Then stir in lemon juice, milk, cheeses and nutmeg and allow to simmer at low-medium heat while pasta finishes cooking. Drain pasta saving some of the water. Put pasta in a serving bowl and mix in creamy spinach ricotta sauce. If sauce is too thick, stir in one tablespoon of pasta water until sauce is creamy. Add a sprinkle of nutmeg and a little more cheese and serve. If you like it, try THIS spinach artichoke dip to greet your guests. Thanks for reading VIDEO Serio Cooks! – Creamy Spinach Ricotta Pasta.
