Best Spaghetti Carbonara Recipe

12-16 oz bacon cooked then chopped finely

1 lb spaghetti

4 eggs

1 cup parmesan

black pepper, optional

Put bacon on a sheet pan and roast at 375F for 15 minutes until crispy, but not burned

Chop finely when cool and set aside.

Boil pasta according to package directions

While pasta is cooking, crack eggs into bowl and whip with a fork, add a cup of grated parmesan (more, if you want) and some cracked pepper.

Drain pasta, but keep a cup of pasta water.

Add hot pasta to eggs, etc. and toss, adding a little of the very hot pasta water until a light sauce consistency, tossing it well.

Gently mix in the bacon.

Serve immediately with more parmesan.

Elizabeth Dougherty has been cooking and writing about food intensively for more than ten years. She is the fourth generation of chefs and gourmet grocers in her family with her mother, Francesca Esposito and grandmother, Carmella being major influences in her early cooking years. As a teenager, her family sent her to Europe where she became focused on French and Italian cuisine.
