INGREDIENTS and METHOD Perfect Quick Blueberry Lemon Bars Recipe
Lemon and blueberry are so perfect together. The tart lemon brings out the sweetness of the blueberries in contrast to each other.
Ingredients and method are together because it was transcribed after I threw it together in the video.
Heat oven to 350 F
Take out 8 oz block of cream cheese to soften
For crust
In processor bowl add:
1 cup flour
1 cup oats
1/4 tsp baking soda
1/4 tsp pink salt
1/2 cup coconut sugar
zest four lemons and set aside
In another small bowl add:
Juice of two lemons
1/2 cup coconut oil
Add to dry mix in processor and buzz.
Press into 8×13 glass baking dish or pan
For filling:
In a medium bowl add:
1 egg
1/3 cup fresh or frozen blueberries
1 TB lemon zest
1 tsp vanilla
3/4 cup Greek yogurt
1/4 cup coconut sugar
2 TB flour
stir together and pour over crust/base
bake 30 minutes
Frosting for Perfect Blueberry Lemon Bars Recipe
While baking add to mixing bowl:
8 oz soft cream cheese
4 TB cream
turn down to low and add
1 cup confectioner’s sugar
whip til fluffy
spread over cooled blueberry bars
garnish with lemon zest
Serve in squares to smiling faces.
