High Protein No Added Sugar Banana Chocolate Muffins – These are so good. They taste like a crepe batter made into a muffin. It’s like the light texture of a crepe batter but it’s in a muffin! In our house, they disappeared fast. Let me share this recipe for muffins I threw together this morning.
Turn on oven to 350F
Take out a silicone 12 muffin pan.
INGREDIENTS
1 very ripe mashed banana
3 large eggs
1/2 tsp vanilla extract
5 3/8 oz flour
1 tsp baking powder
1 tsp baking soda
pinch of pink salt
5 1/2 oz ghee
1/2 cup semisweet chocolate chips
a generous pinch flour to dust the chips so they don’t sink
METHOD High Protein No Added Sugar Banana Chocolate Muffins
stir together banana, eggs and vanilla
In another bowl, whisk flour, baking powder, baking soda
stir dry ingredients into wet, stir in ghee, fold in chocolate chips
Spoon into muffin cups 1/2 to 2/3 full. I got 11 out of this mix.
Bake at 350F for about 20 minutes, or until toothpick is clean
Let cool for about 5 minutes.
Serve the yummy!
