You will LOVE these Gluten Free Double Chocolate Chewy Cookies and best of all, they are not made with processed sugar. Be careful! You cannot eat just one. These are full of snacking at midnight kind of goodness. You better hide the leftovers though, because these didn’t last in our house more than 24 hours. People are truly shocked there is no flour in them. This type of recipe is part of our whole living philosophy. You don’t have to go on special diets. Just make the best choices you can and still have what you want. It works!
INGREDIENTS – Gluten Free Double Chocolate Chewy Cookies
1/2 cup ghee or melted butter
3/4 cup coconut sugar
1 egg
1 tsp vanilla
1/2 tsp baking soda
1/2 tsp salt
1 cup raw cocoa powder
1 cup chocolate chunks
METHOD
Preheat 350F
Mix sugar and ghee
Add beaten egg and vanilla
Add other ingredients, except chocolate chunks
Mix with spatula
Fold in chunks of chocolate.
Scoop small scoops or a little over a tsp of batter for 12 cookies on a sheet pan covered with silpat or parchment.
Let firm up in fridge or freezer for 1/2 or so.
Bake for 10 minutes and let cool for 10 – 15 minutes before gently removing with spatula. They are very chewy! Makes about 36 cookies. If you like these cookies, try THESE gluten free morsels. They are addictive.
