Elizabeth looks at artificial yolk enhancement. Reports suggest that one processing plant may be manipulating yolk colors to make them appear richer and more appealing. Traditionally, the vibrant golden hue of an egg yolk reflects the hen’s natural diet.  However, we’re learning that marigold petals may be used to beef up that yellow hue.  You’ll also hear how egg yolk coloration impacts the appearance and nutritional value of eggs. |

About Elizabeth Dougherty

Elizabeth Dougherty has been cooking and writing about food intensively for more than ten years. She is the fourth generation of chefs and gourmet grocers in her family with her mother, Francesca Esposito and grandmother, Carmella being major influences in her early cooking years. As a teenager, her family sent her to Europe where she became focused on French and Italian cuisine.
